For the Spinach Alfredo Sauce

Method
 

Preparing the Meatballs
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, ricotta, Parmesan, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
Making the Spinach Alfredo Sauce
  1. In a large skillet, melt the butter over medium heat.
  2. Stir in the heavy cream and bring it to a gentle simmer without boiling.
  3. Whisk in the Parmesan cheese, garlic powder, salt, and pepper until smooth and creamy.
  4. Add the chopped spinach and cook until wilted, about 2-3 minutes.
Bringing It All Together
  1. Once the meatballs are done baking, add them to the sauce and gently coat each meatball.
  2. Serve hot, garnished with additional Parmesan cheese if desired.

Notes

Don’t overmix the meatball mixture to avoid dense meatballs. For even softer meatballs, soak breadcrumbs in milk before adding. Consider adding fresh herbs for extra flavor.
