Method
Preheat the Oven
- Preheat your oven to 400°F (200°C).
Prepare the Meatball Mixture
- In a large mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper.
- Gently mix until just combined.
Form the Meatballs
- Shape the mixture into meatballs about 1 inch in diameter.
- Place them on a baking sheet lined with parchment paper.
Bake the Meatballs
- Bake in the preheated oven for 20-25 minutes until golden brown.
Sauté the Spinach
- In a skillet, heat olive oil over medium heat.
- Add fresh spinach and sauté until it wilts.
Make the Alfredo Sauce
- Pour in heavy cream and bring it to a simmer.
- Stir in the mozzarella cheese until melted.
Combine and Serve
- Add the baked meatballs to the skillet with the sauce.
- Coat the meatballs and let cook for an additional 2-3 minutes.
- Serve warm, garnished with extra Parmesan if desired.
Notes
Chill the meatball mixture if too wet. Substitute with ground turkey or different cheeses for variations.
