Preparation
- Begin by boiling water in a large pot.
- Add your pasta (fusilli or rotini) and cook according to package instructions until al dente.
- Once done, drain and set aside.
Cooking
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and garlic, allowing them to sauté together until the onion turns translucent and fragrant, about 3-4 minutes.
- Stir in the cooked chicken and frozen mixed vegetables. Cook for another 3-4 minutes.
- Pour in the chicken broth and heavy cream, then add the dried thyme and rosemary. Season with salt and pepper to taste.
- Bring the mixture to a gentle simmer for 5-7 minutes.
- Add your cooked pasta to the skillet, gently tossing it to coat in the sauce. If using, stir in the Parmesan cheese until melted.
Serving
- Garnish with freshly chopped parsley if desired and serve warm.

For quicker preparation, use pre-cooked chicken and frozen vegetables. Ensure to cook pasta al dente for the best texture.
