Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, pepper, and optional red pepper flakes. Stir until the mixture is smooth and creamy.
  3. Fold in the shredded chicken, chopped spinach, and cooked rice or pasta (if using). Add half of the shredded mozzarella cheese and blend until well combined.
  4. Transfer the mixture into a greased 9x13 inch baking dish.
  5. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese evenly over the top.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes, until the casserole is hot and bubbly and the cheese on top is melted and golden.
  2. Allow it to cool for a few minutes before serving.

Notes

For extra flavor, consider roasting the spinach and chicken with olive oil and garlic before adding them to the mixture. You can also substitute mozzarella with cheddar or gouda.
