Preparation
  1. In a large skillet, heat olive oil over medium-high heat. Once hot, add the chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant.
  2. Add the ground beef to the skillet. Cook, breaking it up with a spatula until it’s fully browned (about 7-8 minutes). Ensure no pink remains.
  3. Season the mixture with chili powder, cumin, paprika, salt, and pepper. Stir well and cook for an additional 2 minutes.
  4. Warm the tortillas by microwaving them for 10-15 seconds or warming them in a dry skillet.
  5. Place a generous scoop of the seasoned beef mixture in the center of each tortilla and top with shredded cheddar cheese.
  6. Fold the sides of the tortilla and roll it up tightly to secure the filling.
  7. Heat a skillet over medium heat and place the wraps seam-side down. Cook for 2-3 minutes per side until golden brown and crispy.
Serving
  1. Serve the Cheesy Beef Wraps hot with optional sides of sour cream, salsa, and a sprinkle of fresh cilantro.

Notes

Enhance your wraps by adding cayenne pepper for heat or diced bell peppers for texture. For extra creaminess, blend cream cheese with the shredded cheese before filling the tortillas.
