Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Core the apples, leaving a hollow cavity for the filling.
  3. In a mixing bowl, blend the cream cheese, sugar, vanilla extract, sour cream, lemon juice, and cinnamon until smooth.
  4. Generously fill each apple with the cheesecake mixture.
  5. Combine crushed graham crackers with melted butter and sprinkle over the stuffed apples.
Baking
  1. Place the stuffed apples in a baking dish and cover with foil.
  2. Bake for 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes.
  3. Drizzle with caramel sauce once out of the oven, if desired.

Notes

For best results, use firm apples. Prepping the filling ahead of time helps with assembly. Keep an eye on apples while baking to ensure they’re tender but not mushy.
