Preparation

  3. Add grated carrots, zucchini, and apple to the wet mixture and stir to combine.

  5. Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
  6. Spoon the batter into the muffin tin cups, filling each about two-thirds full.
Baking
  1. Bake for 20-25 minutes and perform the toothpick test to check doneness.

Making the Frosting
