Preparation
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- In a large bowl, whisk together eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
- Add grated carrots, zucchini, and apple to the wet mixture and stir to combine.
- In another bowl, whisk together all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Baking
- Bake for 20-25 minutes and perform the toothpick test to check doneness.
- Allow the muffins to cool in the pan for about five minutes before transferring to a wire rack.
Making the Frosting
- Beat together softened cream cheese and butter until smooth.
- Gradually add powdered sugar and continue beating until fluffy. Stir in vanilla extract.
Frosting & Serving
- Generously spread the cream cheese frosting on top of each cooled muffin.
