Ingredients
  

Blueberry Layer
  • 400 g frozen blueberries Juicy morsels packed with flavor and antioxidants.

Biscuit Base
  • 125 g digestive biscuits Provides a crispy base.
  • 42 g unsalted butter, melted Binds the biscuit base.
Cheesecake Filling
  • 180 g white chocolate Adds richness to the cheesecake mixture.
  • 125 ml whipping cream Adds lightness to the cheesecake.
  • 250 g low-fat cream cheese, softened The foundation of the cheesecake layer.
  • 125 ml low-fat sour cream, room temperature Adds tanginess to the filling.
  • 1 teaspoon vanilla extract Enhances flavor profile.

Method
 

Prepare the Blueberry Layer
  1. Combine the frozen blueberries, lemon juice, and sugar in a medium saucepan.
  2. Cook over medium heat for about 5-7 minutes until the blueberries soften and turn into a syrup.
  3. Remove from heat and let cool.
Make the Biscuit Base
  1. Place digestive biscuits in a food processor and pulse until fine crumbs form.
  2. Add melted butter and pulse until it resembles wet sand.
  3. Divide the mixture among serving glasses and press down to form an even layer.
  4. Refrigerate while preparing the cheesecake filling.
Prepare the Cheesecake Filling
  1. Melt the white chocolate in a heatproof bowl over a double boiler or in the microwave.
  2. In a large bowl, combine cream cheese, sour cream, and vanilla extract and beat until smooth.
  3. Add the melted white chocolate and mix well.
  4. In a separate bowl, whip the cream until stiff peaks form and gently fold it into the cheese mixture.
Assemble the Parfaits
  1. Layer the cheesecake mixture over the biscuit base in each glass.
  2. Top with a layer of blueberry mixture.
  3. Repeat layers as desired, finishing with blueberries on top.
Chill the Parfaits
  1. Chill the assembled parfaits in the refrigerator for at least 2 hours before serving.
  2. Consider topping with extra blueberries or whipped cream right before serving.
