Prepare the Blueberry Layer

- Melt the white chocolate in a heatproof bowl over a double boiler or in the microwave.
- In a large bowl, combine cream cheese, sour cream, and vanilla extract and beat until smooth.
- Add the melted white chocolate and mix well.
- In a separate bowl, whip the cream until stiff peaks form and gently fold it into the cheese mixture.
Assemble the Parfaits
- Layer the cheesecake mixture over the biscuit base in each glass.
- Top with a layer of blueberry mixture.
- Repeat layers as desired, finishing with blueberries on top.
Chill the Parfaits
- Chill the assembled parfaits in the refrigerator for at least 2 hours before serving.
- Consider topping with extra blueberries or whipped cream right before serving.
