Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a mixing bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and mashed bananas.
- Gradually add the dry ingredients, alternating with the sour cream, mixing until just combined.
- Gently fold in the blueberries, taking care not to smash them.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For added crunch, consider adding walnuts or pecans. Use Greek yogurt instead of sour cream for a vibrant flavor. Ripe bananas yield the best results; the darker the skin, the sweeter the banana. You can also experiment with spices like nutmeg or allspice to enhance flavor.
