Method
 

Preparation
  1. Begin by preheating your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Stir until the mixture resembles wet sand. Press this mixture into the bottom of a springform pan.
  3. In a blender or food processor, combine cottage cheese, honey, Greek yogurt, eggs, vanilla extract, and lemon juice. Blend until smooth and creamy.
  4. Pour the filling mixture over your crust in the springform pan, smoothing the top.
Baking
  1. Insert the pan into your preheated oven and bake for 45-50 minutes until the center is set but slightly jiggly.
Cooling and Topping
  1. Let the cheesecake cool at room temperature, then combine fresh mixed berries with honey in a mixing bowl.
  2. Gently mix the berries to coat them before spooning over the cooled cheesecake.
