Preparation
  1. Heat a skillet or griddle over medium heat for a few minutes.
  2. Butter one side of each slice of bread.
  3. On the unbuttered side of one slice, spread mayonnaise; on the other, spread Dijon mustard if using.
  4. Place one slice of bread, buttered side down, on the skillet. Start layering with a slice of cheese, a generous amount of roast beef, and top with another slice of cheese.
  5. Top with the second slice of bread, ensuring the mayonnaise/mustard side faces inward.
Cooking
  1. Grill the sandwich for 3-4 minutes on each side until the bread is golden, crispy, and cheese is melted, pressing down gently with a spatula.
