Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it thoroughly.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
Mixing
- In a large mixing bowl, cream together the softened unsalted butter and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Be careful not to overmix.
- Gently fold in the chopped walnuts.
Baking
- Pour the batter into the prepared cake pan, smoothing out the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
Notes
For better flavor, use very ripe bananas. Toasting walnuts enhances their flavor. Consider adding 1/2 teaspoon of ground cinnamon for warmth. Cream cheese frosting or whipped cream pairs beautifully with this cake.
