Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, pulse the salmon until finely chopped but not pureed.
- Transfer the salmon mixture to a large bowl and add in bread crumbs, Parmesan cheese, green onions, garlic, egg, Dijon mustard, dried dill, salt, and pepper. Mix until combined, being careful not to overwork the mixture.
- Shape the mixture into meatballs about 1.5 inches in diameter and place on the prepared baking sheet.
Cooking
- Bake the meatballs in the preheated oven for 15-20 minutes until cooked through and golden-brown.
- While the meatballs are baking, prepare the avocado sauce by blending avocados, lemon juice, Greek yogurt, salt, and pepper until smooth.
Serving
- Once the meatballs are done, plate them and drizzle with the creamy avocado sauce. Serve immediately.
Notes
Letting the meatball mixture sit for about 30 minutes before cooking can help meld the flavors beautifully. Use fresh salmon for best results and consider adding your favorite herbs or spices.
