Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, paprika, salt, and pepper.
  4. Add the potato wedges to the bowl and toss to coat evenly.
  5. Spread the potato wedges in a single layer on the prepared baking sheet.
Baking
  1. Bake for 25-30 minutes, turning the wedges halfway through.
  2. Once baked, sprinkle the Parmesan cheese over the hot wedges.
  3. Return to the oven for an additional 5 minutes.
  4. Garnish with chopped parsley before serving.

Notes

For extra flavor, marinate the wedges in the olive oil and garlic mixture for 15-30 minutes before baking. Customize with cayenne for heat or lemon juice for zest.
