Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine olive oil, minced garlic, dried oregano, and paprika. Season with salt and pepper.
- Cut the russet potatoes into wedges and toss them in the bowl with the seasoning mixture.
- Spread the seasoned potato wedges in a single layer on the prepared baking sheet.
Baking
- Bake the potato wedges for 25 minutes. Flip them halfway through cooking.
- After 25 minutes, sprinkle grated Parmesan cheese over the wedges.
- Return the wedges to the oven and bake for an additional 10-15 minutes until golden brown.
Serving
- Once fully baked, sprinkle with freshly chopped parsley and serve warm.
Notes
For best results, soak potato wedges in cold water for 30 minutes before cooking. Avoid overcrowding the baking sheet for optimal crispiness.
