Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, basil, salt, pepper, and parsley (if using). Stir until just combined.
- Shape the mixture into meatballs approximately 1.5 inches in diameter and place them on a lined or greased baking sheet.
Cooking
- Bake the meatballs in the preheated oven for about 20-25 minutes or until lightly browned and cooked through.
- While the meatballs bake, heat the marinara sauce in a saucepan over medium heat until warmed through.
- Serve the meatballs on top of the marinara sauce, or gently toss them in the sauce. Add fresh basil for garnish if desired.
Notes
Use fresh herbs for better flavor. Consider doubling the recipe to freeze for quick meals. For spice, add red pepper flakes. You can also try different cheeses for variety.
