Ingredients
  

For the shrimp
  • 1 lb large shrimp, peeled and deveined Fresh or thawed if frozen
  • 2 tablespoons olive oil Can be substituted with avocado oil
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, Cajun seasoning, lemon juice, minced garlic, salt, and black pepper to create a flavorful marinade.
  3. Add the freshly peeled and deveined shrimp to the bowl. Toss gently until each shrimp is well coated in the marinade.
  4. Spread the seasoned shrimp in a single layer on a baking sheet lined with parchment paper to prevent sticking.
Cooking
  1. Bake the shrimp for about 8-10 minutes, or until they turn pink and opaque.
  2. Remove from the oven, garnish with freshly chopped parsley, and serve immediately with lemon wedges on the side for an extra zesty kick.

Notes

For an extra flavor punch, let the shrimp marinate in the seasoning for about 30 minutes before baking. You can add hot sauce to the olive oil mixture for added heat or include bell peppers or onions for extra flavor.
