Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together the milk, applesauce, maple syrup (or honey), vanilla extract, and egg.
  3. Stir in the rolled oats, cinnamon, and salt until well combined.
  4. Gently fold in the chopped apples.
Baking
  1. Pour the oatmeal mixture into the prepared baking dish and spread it out evenly.
  2. Bake in the preheated oven for 35-40 minutes or until the top is golden and the oatmeal is set.
  3. If adding walnuts or pecans, sprinkle them on top in the last 10 minutes of baking.
  4. Let it cool for a few minutes before serving.

Notes

Serve warm with yogurt or drizzled with extra maple syrup. Can be made ahead and stored in the fridge or frozen for later.
