Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the softened unsalted butter and apple butter with brown sugar. Beat until smooth and creamy.
- Crack in the egg and mix in the vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), and salt.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined. If using nuts, fold them in.
- Drop rounded tablespoons of dough onto a lined baking sheet, spaced about 2 inches apart.
Baking
- Bake for 10-12 minutes or until edges turn lightly golden while centers remain soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
