  • 1/2 cup diced onion Adds sweetness.
  • 1/2 cup sliced mushrooms Optional for added texture and flavor.

Method
 

Preparation
  1. Place the four bone-in chicken thighs in your slow cooker in a single layer.
  2. Season generously with salt and pepper.
  3. In a separate bowl, combine the ranch dressing mix, cream of mushroom soup, chicken broth, diced onion, and sliced mushrooms (if using).
  4. Mix the ingredients thoroughly.
  5. Pour the mixture over the chicken in the slow cooker.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  2. Once cooked, the chicken should be tender and falling off the bone.
Serving
  1. Before serving, sprinkle with fresh parsley.
  2. Serve over rice, mashed potatoes, or with steamed vegetables.

Notes

For best results, use bone-in and skin-on chicken thighs. Season well before cooking. If mushrooms are used, sauté them briefly before adding to the slow cooker.
