Preparation
- Place the four bone-in chicken thighs in your slow cooker in a single layer.
- Season generously with salt and pepper.
- In a separate bowl, combine the ranch dressing mix, cream of mushroom soup, chicken broth, diced onion, and sliced mushrooms (if using).
- Mix the ingredients thoroughly.
- Pour the mixture over the chicken in the slow cooker.
Cooking
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, the chicken should be tender and falling off the bone.
Serving
- Before serving, sprinkle with fresh parsley.
- Serve over rice, mashed potatoes, or with steamed vegetables.
Notes
For best results, use bone-in and skin-on chicken thighs. Season well before cooking. If mushrooms are used, sauté them briefly before adding to the slow cooker.
